About this artwork
Tousselle is an old, hardy wheat variety traditionally grown in the south of France. Adapted to dry, poor soils, it is resistant to heat and disease. Less productive than modern wheats, it is now being rediscovered for its taste, its undemanding cultivation, and its importance for agricultural biodiversity.
